Features

A wine with a deep ruby red colour tending towards garnet; very clean aromas of berry fruit, jam and cherries under spirits; flavours of vanilla, spices, liquorice and bitter almonds.

Vineyards

”Mandolari”, “Tondin”, “Bosco”, “La Costa”.

Grapes

Corvina 60%, Corvinone 25%, Rondinella 15%.

Harvest

Manual harvest (third decade of September, selection of the best bunches exposed to the sun).

Vinification

After a period of natural over-ripening in the fruit cellar of between 90 and 110 days, pressing takes place in 50 hl truncated oak barrels. Fermentation (where the must is in contact with the skins for 30-40 days) takes place without the addition of yeast thanks to the integrity of the grapes.

Maturation

Matured in 350-litre barriques for approx. 36-40 months and finally in the bottle for 6 months.

Gradation

The alcohol content is 16% Vol.

Pairings

It goes well with robust dishes such as game or roasts, very mature cheeses, but is also an excellent meditation wine.

Service

Serve at a temperature of 18°-20°. Uncork at least two hours before serving.
