Soft pressing and selection of musts for Cuveé. Fermentation at low temperature for 20 days.
Maturation in steel. Addition of Liquer de Tirage and bottling. Second fermentation in the bottle and ageing for 15 to 24 months. Followed by Remuage, Degogement and addition of ‘Liquer d’expedition’.
Alcohol content: 12.5% vol. – Acidity: 7g/Lt. (approx.).
Excellent with aperitifs and appetisers, it goes well with first and second courses of fish or vegetarian dishes.
Serve at a temperature of 6-8°.
